All ingredients and preparation methods are based on the Neapolitan traditions. We are using a unique preferment kneeding technique and a rather long fermentation time (up to 72hrs) to get our perfect dough which allows for easier digestion. Our product is crunchy and super soft at the crust due to the indirect highly hydrated preferment kneeding as opposed to the typically used fast created and over yeasted products. The recipe used is based on our elaborate pizzaiolos experiments carried out over the years, which makes us confident in keeping the quality and standards on the highest level.
